Instant tapioca pearls in a case of 50 sachets, 50g each: the same one-drink sachet as our single, packed for a shop. That is 50 drinks a case. Each sachet needs boiling water, a stir and under 5 minutes, then it goes in the cup. No pan, no 30-minute boil and no batch to time.

Every sachet is the same 50g, so every drink gets the same portion without anyone weighing anything. The pearls arrive pre-cooked with sugar and brown sugar in the ingredients, so they are already sweet when they come out of the water, and they should be served straight away rather than held.

This is the trade version of the single 50g sachet, so try one first if you have not used instant pearls. A kitchen with time for the traditional cook should look at the 3kg bag of black tapioca pearls instead, the bulk size at about 75 servings, boiled for 25 to 30 minutes and rested.
