Description
Black tapioca pearls in a 1kg bag, the everyday bag for regular home bubble tea. About 25 servings at 40g dry. Boil for 25 to 30 minutes, rest 15 off the heat, rinse cold and soak in sugar syrup, and you have the chew you pay for over the counter.
Cooked, they are glossy black, soft outside and springy in the middle, and they taste of the syrup they sit in, which is why brown sugar syrup is the classic pairing. Cook only what the next four hours need: that is how long cooked pearls stay at their best, and refrigerating them makes them hard.
The 200g bag is a first cook; if you already know the method, start here. The 3kg bag is the bulk option. For no boiling at all, the instant 50g sachets are ready in under 5 minutes and the 250g black sugar, taro and matcha pouches are ready to eat.

How to use
Bring a large pan of water to a rolling boil, about 7 times the volume of the pearls. Add the pearls, stir until they float, then boil for 25 to 30 minutes with the lid on, stirring now and then. Turn off the heat and leave them for 15 minutes. Drain, rinse under cold water, then soak in sugar syrup or brown sugar syrup until you serve. Use within 4 hours and do not refrigerate.
