Tapioca pearls are the chewy boba at the bottom of a classic bubble tea, made from cassava starch. Traditional pearls boil for 25 to 30 minutes, rest for 15 minutes off the heat, then get a cold rinse and a soak in sugar syrup. We sell them in 200g, 1kg and 3kg bags, at about 40g dry per drink. Instant pearls skip most of that: the 50g sachets are ready in under 5 minutes with boiling water, and the 250g instant black sugar, matcha and taro pearls are ready to eat or take 2 minutes in boiling water. Step by step: how to cook tapioca pearls, or make brown sugar boba.
Traditional pearls: boil for 25 to 30 minutes, take them off the heat and rest for 15 minutes, rinse in cold water, then soak in sugar syrup. Instant 50g sachets take under 5 minutes in boiling water. The 250g instant flavoured pearls are ready to eat, or take 2 minutes in boiling water.
Allow about 40g of dry pearls per drink: a 200g bag makes about 5, a 1kg bag about 25 and a 3kg bag about 75.
Cooked pearls are best eaten within 4 hours. Do not put cooked pearls in the fridge.
Cassava starch. The pearls have very little flavour of their own, so they are soaked in sugar syrup after cooking.
Our traditional pearls and instant 50g sachets are vegan and gluten free. The 250g instant black sugar, matcha and taro pearls are vegan but contain gluten from malt syrup.
